É fácil de perceber que a “tapioquinha” entrou na moda, quando até em Coimbra abre um spot de tapiocas/crepiocas.
A “tapioquinha” ou goma de tapioca, é apenas polvilho hidratado, e que podem fazer em casa - saibam mais nesta receita sobre isso: http://paracozinhar.blogspot.pt/2017/03/tapioquinha-com-manteiga-de-amendoa-e.html - mas que existe à venda pronto a colocar na frigideira.
Eu gosto mais da versão doce da “tapioquinha” que, sem nada a acompanhar, a nada sabe. A versão gulosa de doce de leite e banana é divinal, assim como com nutela e morangos. A versão mais saudável com manteiga de amendoim ou amêndoa e banana é a que me conquista. E as versões salgadas? Não em convenciam...
Mas um resto de goma de tapioca a necessitar de ser consumida e a necessidade de um jantar simples de domingo à noite ditaram o uso da mesma numa versão salgada. E gostei.
Esta muito simples, com pasta de atum, um pouco de abacate e umas folhas verdes. Ficou aprovada.
Este domingo, dia 29 de Abril, das 10h às 13h com o almoço incluído, na Colher de Chá, no Furadouro - Ovar, com o tema "Receitas de Primavera para Desfrutar no Jardim". Inscrições e informações em geral@colherdecha.pt
Ingredientes para 2 tapioquinhas
150g de goma de tapioca hidratada
1 lata de atum em azeite
maionese caseira q.b.
1/2 abacate
salada de folhas verdes
2 ovos
salada de folhas verdes, tomate, maça e nozes pecans para acompanhar
Preparação:
Comece por escorrer o atum e colocar numa taça. Misture depois com cerca de 2 colheres de sopa de maionese caseira. Reserve.
Leve uma frigideira anti aderente ao lume e deixe aquecer bem. Coloque depois metade da goma hidratada numa camada só e deixe cozinhar - o que vai acontecer é vai-se formar uma espécie de crepe, pois toda aquela “farinha” granulosa vai “colar”. Vire cuidadosamente e deixe cozinhar também do outro lado. Retire e repita.
Recheie depois cada um dos “crepes” de tapioca com metade da pasta de atum, o abacate em fatias e uma mão cheia de folhas verdes. Dobre ao meio cada um dos crepes.
Cozinhe depois os ovos na frigideira anti aderente e coloque sobre as tapioquinhas.
Acompanhe com uma salada variada com maçã e nozes e um pouco mais de maionese.
Bom Apetite!
Uma boa sugestão para um pequeno almoço tardio ou refeição ligeira.
ResponderEliminarEmbora não aprecie a textura da tapioquinha, prefiro a versão "crepe"/crepioca, os recheios doces/salgados funcionam bem em ambos os casos, dependendo do gosto pessoal.
As bancas/lojas com tapioca começam a ser frequentes em centros comerciais ou zonas de passagem (tipo as galerias comerciais do metro, food trucks), e já vão ganhando adeptos.
No entanto, e apesar de agora estar na moda (esta e os outros produtos derivados da mandioca), nem todos gostam da sua textura "emborrachada". Um exemplo, é a tapioca (em pérolas, grossas ou finas), que conheço desde pequena e que sempre vi à venda nas mercearias e supermercados. Esta pode ser usada em sobremesas (como se fosse arroz doce, cuscus de tapioca, creme gelatinado, ou mesmo uma espécie de "gelatina" com as pérolas demolhadas em sumo de fruta) ou em sopas (como se fosse massa miúda). A minha mãe fazia sempre tipo "arroz doce", e eu costumo fazer assim ou tipo um creme gelatinado. Já experimentei o cuscus de tapioca (tirado de um blog brasileiro), mas este precisa de ser adaptado para o meu gosto pessoal (a receita leva leite de coco, leite, leite condensado e coco ralado, é demasiado doce e compacta).
Considerações à parte, foi uma boa sugestão de aproveitamento e de apresentar uma versão diferente da tapioca.
