À sexta feira costuma haver sugestão doce, mas desta vez há uma receita de peixe. Daqueles peixes que nem sempre sabemos o que lhes fazer, e que muitas vezes nem fazem parte da nossa lista de favoritos nas compras.
As sardas chegaram no meu cabaz de peixe do peixinho da lota, e os cabazes têm também esta função de nos “obrigar” a usar ingredientes que de outra fora não compraríamos, ou que compramos menos vezes.
Portanto havia 4 sardas grandes e era preciso fazer alguma coisa com elas.
A ideia foi logo de as cozer. E de as servir depois com um molho qualquer. A ideia do pimento e do tomate surge porque é época de pimento e tomate. E apesar de não gostarmos muito de peixe cozido aqui por casa, quando faço a vapor, preparo os lombinhos e sirvo com uma vinagrete ou molho é sempre bem recebido e assim foi.
A experimentarem também com outros peixes.
Ingredientes para 4 pessoas:
4 sardas grandes
1 cebola
1 tomate coração de boi grande e maduro
1 pimento vermelho
sal e pimenta q.b.
50ml de vinho branco
1 folha de louro
1 molho de salsa
2 dentes de alho
azeite q.b.
Preparação:
Coza as sardas em água com sal ou a vapor. (Eu prefiro cozer a vapor, e uso normalmente a varoma da Bimby para isso. Cozo cerca de 30 minutos, temperatura varoma, velocidade 3).
Pique depois a salsa finamente e misture bem com um pouco de azeite. Reserve.
Pique a cebola e os dentes de alho e leve a alourar com um pouco de azeite, juntamente com o louro. Junte depois o pimento em cubinhos pequenos e o tomate também em cubos e envolva bem no refogado. Acrescente o vinho, tempere de sal e pimenta e deixe cozinhar em lume brando.
Entretanto, assim que as sardas estiverem cozinhadas, retire-as e deixe arrefece um pouco. Limpe-as de peles e espinhas, tentando manter os lombos.
Num prato de servir coloque o molho de tomate e pimneto. Por cima disponha os lombos das sardas, e por cima destas o azeite de salsa reservado.
Sirva depois com arroz ou batata cozida e uma salada.
