Neste caso uma ideia diferente para usarem os lombinhos de peixe, estes de pescada, que são super versáteis e que os miúdos costumam gostar bastante. Podem usar outras variedades de peixe ou até uma mistura de vários peixes e até juntar marisco como mexilhões ou camarão, se gostarem.
Por aqui foi uma receita muito apreciada!
Ingredientes para 4 pessoas:
650g de lombinhos de pescada
1 cebola
2 tomates maduro ou pelado q.b.
azeite q.b.
1 folha de louro
2 dentes de alho
1 lata de leite de coco
sal e pimenta q.b.
coentros frescos q.b.
Preparação:
Pique a cebola com os dentes de alho e leve a alourar num pouco de azeite juntamente com a folha de louro. Junte depois o tomate partido aos cubinhos, ou triturado e envolva bem no refogado e deixe cozinhar mais uns minutos. Junte depois o leite de coco, e tempere de sal e pimenta.
Assim que levantar fervura, junte os lombinhos de peixe, inteiros ou partidos ao meio, e deixe cozinhar em lume brando, cerca de 10 minutos, ou até os lombinhos estarem cozinhados.
Antes de servir polvilhe com os coentros frescos picados e acompanhe com arroz branco.
