A receitas destes scones não é nova, por aqui. Faço-os muitas vezes com batata doce, a receita original da Sofia, do Blog da Spice. Mas ficam igualmente deliciosos com abóbora, e eu até acho que gosto mais deles assim. Com a chuva dos últimos dias, parece que não há nada mais perfeito do que uma chávena de chá e um scone.
Gosto também de os preparar para a lancheira do Zé Maria, porque ele adora estes scones, e eles aguentam bem numa caixa hermética por alguns dias. Em opção também os pode congelar e ir retirando conforme as necessidades.
E com o fim de semana à porta, nada melhor do que porem esta receita em prática!
Ingredientes para 8 scones
300g farinha espelta
50g farinha de coco
1 + 1/2 c.sopa fermento
4 c sopa açúcar coco ou mascavado (mais para polvilhar)
75g óleo de coco sólido (ou manteiga)
175ml bebida vegetal
1 c. chá vinagre sidra
1/4 de chávena de abóbora cozida a vapor ou assada
Preparação:
Numa taça misture bem a farinha de espelta com a farinha de coco, o fermento e o açúcar de coco. Junte depois o óleo de coco sólido, e esfarele com as mãos nos ingredientes secos até ficarem bem incorporado em toda a farinha. Junte depois a bebida vegetal com o vinagre e a abóbora bem cozida e escorrida amassada com as mãos, e amasse bem todos os ingredientes até obter uma massa que se descola das paredes da taça. Amasse um pouco na banca da cozinha e forme um bola que depois achata num circulo. Corte depois em 8 pedaços iguais. Coloque os scones num tabuleiro forrado com papel vegetal e polvilhe-os com um pouco mais de açúcar de coco.
Leve depois ao forno previamente aquecido a 180ºC durante cerca de 15minutos.
