Uma pergunta que surge sempre muito, é onde utilizo habitualmente os caldos caseiros que faço e que tenho quase sempre no congelador.
Quase sempre em receitas de arroz ou massas ou espécie de ramem caseiro. Usei caldo caseiro nesta receita de noodles e fez toda a diferença.
Ingredientes para 4 pessoas:
500g de carne picada
2 dentes de alho
1 colher de chá de gengibre fresco picado
3 colheres de sopa de molho de soja
1 colher de sopa de Ketchup
1 colher de sopa de óleo de sésamo tostado (opcional)
1 cenoura grande ralada
250g de noodles de ovo
Sal e pimenta q.b.
Azeite q.b.
200g de couve em juliana fina
Preparação:
Pique os dentes de alho e leve-os a alourar numa frigideira com um fio de azeite. Junte a carne picada e deixe a carne dourar.
Entretanto junte numa taça o molho de soja, o ketchup, o gengibre e o óleo de sésamo e misture bem.
Quando a carne estiver dourada, junte esta mistura e envolva bem. Acrescente depois os noodles e cubra com cerca de 300ml de água ou caldo caseiro. Ajuste de sal e pimenta.
Quando os noodles estiverem praticamente cozinhados, envolva bem na carne a acrescente a cenoura ralada e a couve. Envolva bem para murchar mas manter a textura crocante.
Se gostar acrescente um pouco de picante a gosto.
